Dice up the meat, some carrots, some potatoes, throw in the gravy, a tsp or two of worchestershire sauce and a little seasoning. Simmer until the veggies are tender. Also you fill the house with wonderful aromas that can last for days. <br /><br />Smothered roast. Get a nice chuck roast, great flavor and tender. Put a little olive oil in your pot. Season the roast and slap it in the pot. Brown it good on both sides. Cut up an onion. You can do that ahead of time and keep the cut up onion in the freezer. Cover the roast with cut up onion and garlic. Cover with some water, put the lid on, bring it to a boil, turn it down to simmer and just wait and drool. Check occasionally to make sure the water doesn't all cook out. When meat falls a part, it is done. <br /><br />To make a gravy. Take the meat out. Make a paste with water and flour. Add slowly to the meat juice and stir. It will thicken. You may have to add a little more water to get the right consistancy. Not too much. <br /><br />Make yourself some mashed potatoes or rice to rest under your gravy. I followed rules well when I was a kid, but once I was an adult, I became a rebel. Just the opposite of you. I don't think I settled down, until the last few years.
